Simple & Healthy Thumbprint Cookies





Iโ€™ve officially died and gone to thumbprint cookie HEAVEN ๐Ÿ‘๐Ÿผ๐Ÿช๐Ÿ‘ผ๐Ÿผ. Stop everything youโ€™re doing and MAKE THESE RIGHT NOW.


COOKIE INGREDIENTS:

  • 2 cups almond flour

  • 1/4 cup almond butter

  • 1/2 cup maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/2 tsp sea salt

TOPPING INGRDIENTS:

  • @hukitchen gems or Hu bar, broken into squares

  • flakey sea salt

OR

  • homemade chia & berry jam (frozen berries, maple syrup, chia seeds, water)

  • flakey sea salt


Directions For the Cookies:

  1. Preheat oven to 350 degrees

  2. Combine all cookie ingredients in a large mixing bowl. Mix well

  3. Roll dough into 1 inch thick balls & place on a cookie sheet

  4. Place your thumbprint in the center of the cookie

  5. Bake for 10-12minutes

  6. Add your chocolate squares on half or all of the cookies about 9 mins into baking, leaving half for your jam to be added to the other cookies after baking

Yields 12 cookies


Directions For the Jam:

  1. Place 1 cup of preferred fresh or frozen berries in a small pot on medium heat.

  2. Add 3 tbsp of water & begin to mash berries with a fork.

  3. Bring berries & water to a simmer then put heat on low.

  4. If you want some extra sweetness, add 1-2 TBSP of maple syrup.

  5. Add chia seeds to thicken it up and a spritz of lemon juice to make it extra tasty.

  6. Turn heat off and allow to cool and thicken for 10 minutes before serving.

  7. Store in refrigerator for up to 1 week.


If you have @almondcow or make your own almond milk, you can substitute one of the cups of almond flour using your fresh pulp & omit the maple syrup and vanilla.
