flakey sea salt
OR
homemade chia & berry jam (frozen berries, maple syrup, chia seeds, water)
flakey sea salt
Directions For the Cookies:
Preheat oven to 350 degrees
Combine all cookie ingredients in a large mixing bowl. Mix well
Roll dough into 1 inch thick balls & place on a cookie sheet
Place your thumbprint in the center of the cookie
Bake for 10-12minutes
Add your chocolate squares on half or all of the cookies about 9 mins into baking, leaving half for your jam to be added to the other cookies after baking
Yields 12 cookies
Directions For the Jam:
Place 1 cup of preferred fresh or frozen berries in a small pot on medium heat.
Add 3 tbsp of water & begin to mash berries with a fork.
Bring berries & water to a simmer then put heat on low.
If you want some extra sweetness, add 1-2 TBSP of maple syrup.
Add chia seeds to thicken it up and a spritz of lemon juice to make it extra tasty.
Turn heat off and allow to cool and thicken for 10 minutes before serving.
Store in refrigerator for up to 1 week.
If you have @almondcow or make your own almond milk, you can substitute one of the cups of almond flour using your fresh pulp & omit the maple syrup and vanilla.
