I’ve been on a serious shishito pepper kick lately! This recipe took me all of 10 minutes and cost under $5 — can’t beat it.
For the Peppers:
1 case of shishito peppers -- I got mine from @traderjoes for $2.99
2 tbsp avocado oil
Pinch of flakey sea salt to top
For the Sauce:
1/4 cup vegan mayonnaise
2 garlic cloves, minced
1/2 tsp smoked paprika
Cayenne pepper to taste
salt & pepper
Rinse & dry peppers.
Heat avocado oil in frying pan on medium heat.
Add peppers to pan and continuously toss until peppers are charred to your liking.
Optional to add frying pan (if oven safe) to oven and broil for a minute or 2 to get it extra crispy!
Remove peppers from heat and place on a plate -- sprinkle with flakey sea salt.
To make sauce, combine all ingredients in a small bowl.
