Energy Balls



 

INGREDIENTS:

  • 1 cup gluten free oats

  • 1/2 cup plain coconut shavings

  • 3 scoops of Blue Majik or 1 tsp of some other colorful superfood like matcha

  • 4 dates, pitted

  • 1 cup cashews

  • 3 tsp coconut oil

  • 1 tsp maple syrup

  • 1 tbsp almond butter


DIRECTIONS:

  1. In a food processor, combine oats, coconut shavings and superfood powder, pulse well until throughly mixed, set aside in a small bowl.

  2. In the same food processor, combine pitted dates, cashews, coconut oil, maple syrup and almond butter until thoroughly mixed. *see note #4*

  3. Then slowly add the oat mixture back into the food processor and blend all ingredients together.

  4. Use a tablespoon to scoop out the mixture and begin to form golf ball sized balls with your hands.

NOTES:

  1. If the consistency seems too dry, add more coconut oil or maple syrup.

  2. If it seems to wet, add more coconut shavings or almond butter.

  3. You can eat them right away, but they have the best consistency if you leave them in the fridge overnight.

  4. Soak the dates and cashews in water at least 10 minutes prior to blending. Makes it much easier on you and your food processor.
